Lobos Meat & Tapas in Soho was started by people who had spent years doing the cooking and the serving in someone else's tapas restaurant.
This profile sticks to what the restaurant's own listing in our directory says. If a detail isn't in that record, it isn't in this post.
Who started Lobos
According to its listing, four colleagues, Roberto, Joel, Cortés and Ruben, first met while working together in a tapas restaurant in London. They worked together for more than seven years, cooking and looking after guests with what the restaurant calls a very friendly approach.
In January 2015 they decided it was time to open a restaurant of their own. The fifth member of the team was Ellen, described in the record as an experienced Singaporean restaurateur with an eye for locations. The restaurant's own summary of how the four of them work together in one room is that it is "pure Rock & Roll".

Meat cuts, wine and tapas
The full name is Lobos Meat & Tapas, and the listing says it was born from a love of excellent meat cuts, good wine, hospitality, Spain and London. It sums up its attitude as "No tricks, no games."
In Spain, meat is a normal part of a tapas spread rather than a separate steakhouse world. Grilled Iberian pork, chorizo and cured ham all sit happily next to croquetas and vegetables on the same bar counter. If you want a primer on the pork side of that, our pages on secreto ibérico and presa ibérica explain two of the cuts you often see on Spanish menus. That is general background, not a description of the Lobos menu, which is best checked on the restaurant's own site.
The practical way to order at a meat-and-tapas place is the Spanish way: share. Pick a couple of meat plates for the table, add lighter tapas around them, and order more as you go instead of all at once.
