Secreto Iberico

Secreto is a 'hidden' skirt-like cut from between the shoulder and belly of the Iberian pig, so called because butchers historically kept it for themselves. It comes from the acorn-fed cerdo iberico raised in the dehesa oak pastures of western Spain, and its heavy intramuscular marbling makes it a modern grill favourite.
