Jamón serrano vs ibérico: what the label really means

Jamón serrano and jamón ibérico are both Spanish dry-cured hams, and menus abroad often treat them as the same thing. They are not. The difference starts with the pig, not the curing room.

Serrano: the everyday ham

Jamón serrano is made from white pig breeds raised on farms. It is salted, then air-dried for months. It is the ham most Spaniards eat most days, in bocadillos, on bread with tomato, or cut into cubes over salmorejo. Good serrano is worth eating. It is just a different product from ibérico.

Ibérico: the breed and the label

Jamón ibérico comes from the Iberian pig, a dark-skinned breed native to the southwest of the peninsula, either purebred or crossed with another breed. Spanish rules sort it with a coloured label on the leg:

  • Black: bellota 100% ibérico, purebred and acorn-fed
  • Red: bellota ibérico, acorn-fed but cross-bred
  • Green: cebo de campo, raised outdoors on pasture and feed
  • White: cebo, farm-raised on feed

Bellota hams are cured for longer than serrano, and the fat from an acorn diet melts at a low temperature, which is why a thin slice turns glossy on the plate. Our guide on whether your ibérico is real covers what to ask when you are abroad.
