Huevos Rotos: How to Order Spain's Broken Eggs

Fried eggs with runny yolks over fried potatoes and thin slices of cured ham in a clay dish

Huevos rotos means 'broken eggs'. Fried eggs are laid over a bed of fried potatoes and cut open, so the runny yolk soaks into the potatoes. Most versions add something salty and cured on top, usually jamón or chorizo. Our dish page covers the basics. This guide covers the names you'll see on menus, the common toppings and how to eat it.

Rotos or estrellados?

The dish is tied to Madrid, where it is also called huevos estrellados, 'smashed eggs'. The two names are used for the same idea, and you will see both on Spanish menus abroad.

You may also see the name attached to whatever goes on top: huevos rotos con jamón, con chorizo or con chistorra, the thin Navarrese sausage. The eggs and potatoes stay the same; the topping changes.

What a good plate looks like

  • Potatoes: fried in olive oil until golden. Some kitchens cut them like chips, others in thin slices or rough chunks. Both are normal.
  • Eggs: fried so the whites are set and the yolks are still liquid. If the yolks are cooked hard, the dish loses its sauce.
  • Topping: jamón usually goes on at the end, so it warms without frying. Chorizo or chistorra is usually fried.
  • Timing: it should go to the table straight away. Potatoes that sit under egg go soft quickly.

How to eat it

If the eggs arrive whole, they are often broken at the table: cut through the yolks and mix them roughly into the potatoes. Then everyone eats from the same dish with forks, often with bread for the last of the yolk. It is normally ordered as a ración to share, not as one person's main course.

It also fits easily into a larger shared order, next to plates such as pimientos de Padrón and croquetas.
