Croquetas
Croquetas are Spanish croquettes: a thick béchamel enriched with jamón, chicken, cod or wild mushrooms, breaded and fried until crisp outside and molten inside. A bar’s croquetas are a point of pride — creamy interior, thin shell, no grease.

Where it comes from
Croquetas came to Spain from France in the 19th century and were quickly adopted as a way to stretch leftovers into a rich béchamel filling. Bound with milk, flour and butter, studded with jamón, then breaded and fried, they became a fixture of home cooking and bar counters. Croquetas de jamón are now among the most beloved Spanish tapas.

- Croquetas
Spain's beloved croquettes wrap a thick, savoury béchamel of jamón in a thin, crisp crumb that gives way to a molten interior. Making the béchamel loose enough to be creamy yet firm enough to shape is the whole art.
