Pintxos are the Basque form of the tapa: small, often elaborate bar snacks usually skewered with a stick (the 'pintxo') onto a slice of bread. Born in the bars of San Sebastián and Bilbao, they are laid out along the counter so drinkers help themselves and pay by the stick. The txikiteo — hopping bar to bar for a pintxo and a small wine — is a defining Basque social ritual.
