Spanish cooking has quietly gone global. Beyond the obvious tapas bars, a handful of cities now host serious Spanish kitchens — regional, seasonal, and run by cooks who trained in Spain. Here is where the scene is strongest.
London
The deepest Spanish scene outside Spain: Basque asadors, sherry bars, and modern tapas rooms across the city. Start with our London guide and the wider United Kingdom listings.
New York
From old-school tapas in the Village to ambitious tasting menus, New York has range and depth, and a serious sherry culture to match.

Bangkok
An underrated surprise. Bangkok has a cluster of genuinely good Spanish kitchens, several run by Spanish chefs, pairing jamón and cava with the city’s appetite for late, social dining.
Paris
France’s capital treats Spanish food with the seriousness it deserves — proper ibérico, natural Spanish wine, and Basque influence close to the border. See Paris.

One place to start in each city
