Queso Mahón
Queso Mahón is Menorca's cow's-milk cheese, its orange rind rubbed with butter and paprika during ageing and its flavour turned salty and sharp by the island's sea air. Rather than a recipe, it is best enjoyed simply, dressed the traditional Menorcan way.

Approximate, per 3-4 wedges (~30g). Values vary by recipe and portion.
Ingredients
- ·300 g Mahón cheese (semi-cured), sliced
- ·2 tbsp extra virgin olive oil
- ·1 tbsp fresh tarragon leaves, chopped
- ·coarsely ground black pepper
- ·crusty bread, to serve
Method

Take the cheese out of the fridge 30 minutes before serving so it comes to room temperature and its flavour opens up.

Cut the Mahón into triangular slices or rough wedges, leaving the distinctive orange rind on.

Arrange the pieces on a serving plate.

Drizzle with a good extra virgin olive oil, the classic island dressing for this cheese.

Scatter over the chopped tarragon and a grind of black pepper.

Serve with crusty bread as a starter or with the cheese course, alongside a glass of red wine.
