Agua de Valencia
A deceptively easy-drinking Valencian punch of cava, fresh orange juice and a double hit of gin and vodka, born in a Valencia café in the late 1950s. It tastes like sunshine and disappears far too fast, which is exactly the trap.

Ingredients
- ·500 ml (2 cups) freshly squeezed orange juice, chilled
- ·500 ml (2 cups) cava, well chilled
- ·60 ml (1/4 cup) gin
- ·60 ml (1/4 cup) vodka
- ·1 to 2 tablespoons sugar, to taste
- ·Ice cubes
- ·Orange slices, to garnish

Squeeze enough oranges to get 500 ml of fresh juice and strain out most of the pulp.

In a large jug, stir the sugar into the orange juice until it fully dissolves.

Add the gin and vodka and stir again.

Just before serving, pour in the well-chilled cava and stir gently once, so you keep the bubbles.

Fill wide wine glasses with ice, pour over the agua de Valencia and garnish with an orange slice. Serve immediately while it is cold and lively.
