Pintxo is a restaurant whose mission is to promote Spanish gastronomy and culture through a contemporary pintxos in Italy. The decoration of the restaurant reflects Spanish identity, as it is inspired by the bars of northern Spain and features Spanish wines and vermouths, traditional ceramics, porrones, vintage siphons, artwork by Spanish artists, original typographic prints from Madrid, and a collection of Tapas magazines. The Pintxo logo represents Spain, as it depicts a stylised olive on a skewer, inspired by the iconic Spanish gilda pintxo. The style of cooking at Pintxo is based on Spanish tradition, using recipes inspired by Basque and Spanish gastronomy, combined with contemporary interpretations and high-quality Spanish products. The restaurant appears in various local publications and guides, as well as on digital platforms. The restaurant concept and its dishes can be explained by the owners, Jason, the Bar Manager, and other members of staff, all of whom receive ongoing training in Spanish gastronomy and culture.

“A friend of mine and my son tried this contemporary Spanish bistro for dinner in Milan's Sempione | Citylife area, inspired by Ferran Adrià, so to speak. It's the "rock-and-roll" sibling of the famous Albufera near the central station | Caiazzo. It's owned by the same owner, with Alice's wonderful and welcoming hospitality and the expert, creative, and balanced cuisine of her husband, Chef Mateus. The atmosphere is refined yet relaxed, with quick and competent service: Jason's cocktails are also excellent. We opted for the tasting menu (my friend and I), and my son had a gazpacho and a langostina sandwich. It was all excellent. What impressed me most: The pinchos/pintxos, which I love, especially the masterful interpretation of the classic Gilda, but also the one with foie gras and caramelized onions. Crispy bread until the last bite, generous toppings. Croquetas: dry and creamy fried food, fillings that are never boring. Gazpacho and stracciatella: fresh, photogenic, perfect for a starter. Arzak-style egg: perfection. Iberian presa tataki with plankton mayonnaise and bottarga: perfectly cooked, elegant marine flavors, a signature dish. Grilled octopus on a silky cream with crunchy vegetal notes: a balance of smokiness, acidity, and sweetness. Basque cheese tart: baseless, with a soft goat cheese center, as if to finish the meal in the French style, caramelized edge, and a palate-cleansing coulis. Well-crafted cocktails: citrusy and dry, they complement iodine dishes and meats. For foodies and couples/friends looking for a "slow escape" in the city: informal fine dining, high technique, clean flavors. Also excellent for professionals. Prices and Menu: Tapas/pintxos and 5–7-course tasting menus start around fifty euros, but you can also order à la carte or try the aperitivo menu (though be warned, it would be a shame, as the tasting menu is truly a sensory experience). The quality/price ratio is consistent with the quality of the ingredients and the precision. I recommend making a reservation, as there are only 20 seats. Once you go, you'll never want to stop! It's been just a few days since my first visit, and I can't wait to go back. Highly recommended like few other places in the city.”

“Disappointing. At first glance, the menu was interesting, and the location was nice. It's a shame the staff was completely unprepared and the wine and dish descriptions were completely lacking. The portions were really small compared to the price of the dishes, and unfortunately, the food, despite an initially interesting and at times creative menu, was also disappointing—the shrimp sandwich was soaked in oil, and the diaphragm with sea urchin sauce was rubbery and not particularly flavorful. There's potential, but more investment should be made in staff training, from the dining room to the kitchen, and the quality/price ratio should be aligned.”
