Where to Eat Paella in Bangkok (and What to Order)

Real paella takes time: expect 30–45 minutes from order to pan at any restaurant doing it properly. Bangkok’s best versions use bomba rice and build a proper socarrat — the caramelized crust at the bottom.
Order tip: arroz negro (squid ink) travels worst and tastes best in-house; seafood paella is the crowd-pleaser; ask whether the pan is cooked to order or finished from a base — the honest kitchens tell you.
