Where it comes from
Patatas bravas emerged in Madrid's tapas bars in the mid-20th century, with several old taverns claiming to have created the spicy sauce. Fried potato cubes are dressed with a piquant paprika-and-tomato 'brava' sauce, the 'brave' name nodding to the heat. It has since become one of Spain's most ubiquitous bar tapas nationwide.
