The original Basque pintxo: a skewer of green olive, salt-cured anchovy and pickled guindilla pepper. Created in the 1940s at Bar Casa Vallés in San Sebastián, it was named after Rita Hayworth's film character Gilda because it was 'green, salty and a little spicy'. It remains the archetypal one-bite bar snack across the Basque Country.
